Our “Col de Pavei” in the Millesimato Extra Dry version is a sparkling wine of great softness and fragrance capable of enveloping the palate with its intense fruity notes. DENOMINATION: COL DE PAVEI – Extra Dry TYPE OF WINE: Spumante Millesimato PROVENANCE: Production superiors of the estate vineyards VINEYARD: 100% Glera TYPE OF SOIL: Soils of different nature and composition according to the location of the vineyards ALTITUDE: 150 m. slm VINEYARDING SYSTEM: Traditional Valdobbiadene method (modified Cappuccina) AVERAGE AGE OF THE VINEYARD: Old vines over 45 years old YIELD: Maximum 20% over the 135 q/ha set by the production regulations HARVEST: mid to late September, exclusively by hand and selected WINE-MAKING : Traditional white vinification: soft pressing of the grapes with pneumatic press, flotation of the musts and fermentation at controlled temperature (17-18°C) in cement tanks. Aging and resting on the noble lees for four to five months until filtering. PRESSING : Martinotti method in stainless steel autoclaves for 35-40 days Refermentation temperature 16-18°C
